  • Ingredients:




  • 1 Cup Rice


  • 1/2 Cup urad dal


  • salt to taste


  • Fruit salt (Eno without flavor)




  • Ingredients:




  • 1 Cup Arhar Dal or toovar dal or pigeon pea lentils


  • 1 cup bottle gourd chopped


  • 1 tsp cumin seeds


  • a pinch of asafoetida


  • 1 tsp mustard seeds


  • 2 -3 whole dry red chili


  • 2 tomatoes chopped


  • 1 tbsp tamarind pulp


  • 2 bay leaf


  • 5-6 curry leaf


  • 2 onion chopped


  • 1 cup pumpkin chopped


  • 1 tbsp sambar powder


  • 1 tsp turmeric powder


  • 1/2 tsp red chili powder


  • 1 tsp sugar


  • salt to taste


  • 1 tsp oil


  • 1 tsp garam masala


  • 1 tsp urad dal

Directions

  • Combine the urad dal and rice in a deep bowl, soak it in enough water for 8 hours. Drain the urad dal and rice and blend in a mixer to a smooth paste using very less water. Transfer the mixture into a deep bowl and keep aside.
  • Add the salt and mix well. Cover and ferment in a warm place for 8 hours. Just before steaming, add fruit salt and mix gently.
  • Pour 2 tbsp of the batter into each greased idli mold and steam in a steamer for 8 - 10 minutes.
  • Method for samberWash dal and soak for 30 minutes. Take dal in a pressure cooker and add 2 cup water, salt, pumpkin,bottle gourd and pressure cook for 3 whistles and keep aside.
  • Heat a pan and add 1 tsp oil and add urad dal,cumin seeds, mustard seeds, asafoetida, bay leaf , curry leaf, whole dry red chili and mix well. Then add chopped onion and saute till the color changes and then add turmeric powder and chopped tomato and saute.
  • Add red chili powder, and sambar powder and tamarind pulp and half cup water and cook for 5 to 10 minutes. Then add cooked dal and veggie, and sugar and cook for 10 minutes add water if required. Keep stirring occasionally.
  • Finely add garam masala and cook for 1 minute.
