Combine the urad dal and rice in a deep bowl, soak it in enough water for 8 hours.
Drain the urad dal and rice and blend in a mixer to a smooth paste using very less water.
Transfer the mixture into a deep bowl and keep aside.
Add the salt and mix well.
Cover and ferment in a warm place for 8 hours.
Just before steaming, add fruit salt and mix gently.
Pour 2 tbsp of the batter into each greased idli mold and steam in a steamer for 8 - 10 minutes.
Method for samberWash dal and soak for 30 minutes.
Take dal in a pressure cooker and add 2 cup water, salt, pumpkin,bottle gourd and pressure cook for 3 whistles and keep aside.
Heat a pan and add 1 tsp oil and add urad dal,cumin seeds, mustard seeds, asafoetida, bay leaf , curry leaf, whole dry red chili and mix well.
Then add chopped onion and saute till the color changes and then add turmeric powder and chopped tomato and saute.
Add red chili powder, and sambar powder and tamarind pulp and half cup water and cook for 5 to 10 minutes.
Then add cooked dal and veggie, and sugar and cook for 10 minutes add water if required.
Keep stirring occasionally.
Finely add garam masala and cook for 1 minute.
