Ingredients

Serves : 6
  • DRY ingredients: 1-1/2 cup all purpose flour


  • 1 cup whole wheat flour


  • 2 tsp baking powder


  • 1 tsp baking soda


  • 1/4 tsp salt


  • 2 tsp pumpkin spice


  • 1 tsp ginger powder


  • WET ingredients: 1-1/2 cups grated carrots


  • 1 cup unsweetened applesauce


  • 1/2 cup sugar


  • 1 cup milk


  • 1 tsp vanilla extract


  • 1/2 cup chopped walnuts

Directions

  • Sift together all the dry ingredients.
  • Combine all the wet ingredients together.
  • Mix the dry ingredients with wet in 3 parts stirring after each addition.
  • Let the mixture sit for 3-4 minutes.
  • Transfer the batter to microwave safe muffin moulds. Fill them halfway through the mould.
  • Microwave on high power for 1:30 seconds.
  • Remove from microwave, cool them a bit and unmould. Serve with dollop of honey or whipped cream.
