Ingredients

Serves 10

  • For dough: 1 teaspoon instant yeast

  • 1 teaspoon sugar

  • 1 pinch salt

  • 1 cup milk

  • 3 cups all purpose flour

  • For filling: 2 teaspoons melted butter melted

  • 1 tablespoon grounded cinnamon

  • 1/4 cup organic cane sugar

    In a bowl in the microwave at 30-second heat the milk until luke warm .

    Transfer milk to a large mixing bowl and add yeast. Then add 1 Tbsp sugar and the salt and stir. Let activate for 10 minutes.

    Next add in flour 1/2 cup at a time. The dough will be sticky. When it is too thick to stir, transfer to a lightly floured surface and knead for a minute or so until it forms a loose ball . Now keep dough in a bowl . Cover with plastic wrap and set in a warm place to rise for about 1 hour.

    FOR FILLING: In a bowl, mix in both the sugars and the cinnamon powder together until well combined.

    Now on a lightly floured surface, roll out the dough into a thin long rectangle. Brush with melted butter and top with sugar-cinnamon powder.

    Starting at one end, tightly roll up the dough and seam from both sides. Then, cut the dough into 1.5 - 2 inch sections and keep in a greased 8x8-inch round pan (we will have about 11 rolls from this dough).

    Brush with butter and cover with plastic wrap. Keep aside for half an hour more and let rise again.Preheat oven to 250 degrees C

    Once the oven is hot, bake rolls for 25-30 minutes at 180 degrees C or until slightly golden brown. Let cool for a few minutes and then serve immediately. Lightly sprinkle powdered sugar on ready rolls for extra flavour.

    Optional: Frost with dairy-free cream cheese frosting or a simple mixture of 1 cup (organic powdered sugar and 1-2 Tablespoon almond milk. Or can be frosted simply with melted chocolate.
