Ingredients

Serves : 2
  • 1 cup All Purpose Flour


  • 1/2 cup caster sugar


  • 1/2 cup or 100 gm butter


  • 1tbsp milk (optional)


  • 1/2 tbsp vanilla essence


  • 1.5 tbsp strawberry jam


  • 1 tbsp water

Directions

  • In a big bowl, add the butter and sugar and mix them with a hand mixer till well mixed.
  • Now add the flour and essence and mix with a spatula till it resembles bread crumbs.
  • Now use your hands and mix together to form a dough. If the dough crumbles, add the milk.
  • Line a baking tray. Take little balls of dough and press gently to make cookies, do the same till you use up the dough.
  • Press your thumb in the middle of the cookie to make a little indent.
  • Mix the jam and water together in a bowl. Fill the cookie indents with the jam mixture.
  • Freeze for 10 minutes.
  • Pre heat your oven, put the cookies in the oven once they have solidified in the freezer.
  • Bake for 12 to 15 minutes or till done.
  • Notes- ➡Remember small cookies get baked faster than large ones. ➡ If you knead the flour too much, the butter will melt, which will lead to difficulty in making cookies. ➡ Don't open the oven door to see your cookies while they are baking ➡ Let the cookies cool down before removing them from the baking tray or eating. ➡ For Microwave - Use the convection mode - Use the high rack - Pre heat for about 10 mins at 180 degrees Most importantly- Enjoy the process of baking, it will make you forget all your worries.
