6 Boneless chicken thighs
1 cup almond meal/flour
1 cup grated Parmesan cheese
1 beaten egg
1 tsp garlic powder
1 tsp onion powder
1 tbsp red chili flakes
1 tsp Italian seasoning
1 tbsp dried parsley
1 tsp paprika
1 tsp salt or to taste
1 tsp black pepper powder or to taste
1-1/2 tbsp olive oil/melted butter or as required (optional)
Preheat oven to 190 Deg C.
Clean and trim off the fat from Chicken. Wash the chicken and drain the water. Part dry chicken with paper towel.
Season the chicken with little salt, pepper, garlic powder, and onion powder.
Combine almond meal and Parmesan cheese. Mix all spices and herbs in the almond meal/Parmesan cheese mixture.
Add pinch of salt to the beaten egg.
Bake for 40 minutes flipping the chicken pieces halfway through baking time.
Switch off the oven. Remove the tray from oven. Brush chicken pieces with olive oil/melted butter (both sides) and place them back in the warm oven till it's time to serve.
