"Breaded" Baked Chicken

Ingredients

Serves : 3
  • 6 Boneless chicken thighs


  • 1 cup almond meal/flour


  • 1 cup grated Parmesan cheese


  • 1 beaten egg


  • 1 tsp garlic powder


  • 1 tsp onion powder


  • 1 tbsp red chili flakes


  • 1 tsp Italian seasoning


  • 1 tbsp dried parsley


  • 1 tsp paprika


  • 1 tsp salt or to taste


  • 1 tsp black pepper powder or to taste


  • 1-1/2 tbsp olive oil/melted butter or as required (optional)

Directions

  • Preheat oven to 190 Deg C.
  • Clean and trim off the fat from Chicken. Wash the chicken and drain the water. Part dry chicken with paper towel.
  • Season the chicken with little salt, pepper, garlic powder, and onion powder.
  • Combine almond meal and Parmesan cheese. Mix all spices and herbs in the almond meal/Parmesan cheese mixture.
  • Add pinch of salt to the beaten egg.
  • Bake for 40 minutes flipping the chicken pieces halfway through baking time.
  • Switch off the oven. Remove the tray from oven. Brush chicken pieces with olive oil/melted butter (both sides) and place them back in the warm oven till it's time to serve.
