FOR SOUP: 1 head fresh broccoli (florets only) grated
2 cups chicken broth
1-1/2 cups milk
1-1/2 cup cheddar cheese
1 tsp salt or to taste
1 tsp black pepper powder or to taste
1 tsp garlic powder
1 tsp onion powder
1 tsp oregano
1 tsp chives
2 tbsp cornflour
2 tbsp water
FOR BREAD: 4 tbsp all purpose flour
1/2 tsp baking powder
1/2 tbsp cold butter
1/8 tsp salt
2 tbsp cheddar cheese
3-1/2 tbsp milk
1/2 tsp oregano
1/2 tsp chives
FOR SOUP: In a microwave safe container, microwave broccoli with little salt on high power for 2 minutes.
In another tall microwave safe container, boil broth, milk, cheese, grated broccoli, salt, black pepper powder, garlic and onion powders, oregano, and chives. Microwave for 10 minutes on high power stirring every 2-3 minutes.
Remove container from microwave. Add cornflour mixed with water to form a slurry to the soup. Give it a good stir and microwave again for 2 minutes.
FOR BREAD: Combine flour, salt, and baking powder in a bowl.
Add butter and rub flour and butter with fingers.
Add cheese, milk, and all the herbs to the mixture. Make a dough.
Grease a small microwave safe bowl or ceramic bowl with butter. Put the dough in the bowl and microwave on high power for 1:30 seconds on one side. Flip the bread and again microwave for 1:30 seconds.
Transfer hot soup to a serving bowl and serve with bread on the side.
