Wash and soak dal for 1/2 an hour. Drain the water.
Add 8 cups of water, salt and turmeric powder. Microwave in a microwave safe bowl at 100% power for 15 mins. Allow to stand (covered) for 10 mins.
Microwave oil at 100% power for 30 secs in a separate microwave safe bowl.
Add mustard seeds, curry leaves, red chillies, and asafoetida and chopped onions. Microwave at 100% power for 2 mins.
Add remaining chopped vegetables and 1 cup of water. Microwave (covered) at 100% power for 10 mins.
Mix these cooked vegetables with the cooked dal.
Add sambar powder and tamarind paste. Microwave covered at 100% power for 5 mins.
Allow to stand for 5 mins.
Serve with idli, vada, boiled rice or dosa (anything of your choice)
