  • 3/4 cup sugar

  • 1 cup milk, room temperature

  • 1 & 1/2 cup 3 tablespoons refined flour

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 3 tablespoons olive oil or any vegetable oil

  • 1 tablespoon lemon juice

  • 1/4 teaspoon lemon zest


  • Preheat the convection mode microwave oven at 170°
  • Grease or line a baking pan with parchment paper
  • Whisk sugar and room temperature milk well.
  • When sugar dissolves add 3 tablespoon of oil and mix well to form an emulsion.
  • Sieve flour, baking powder and baking soda.
  • Add the dry ingredients in the milk, oil and sugar mixture.
  • Add lemon juice and lemon zest.
  • Mix well and make a lump free smooth batter.
  • Pour the batter in the greased mould and bake for 25 to 30 minutes.
  • The time depends on the type of your oven. Check after 25 minutes with a toothpick. It should come out clean, if not bake for some more time till done.
  • Let it cool down completely before slicing. Enjoy the eggless and butter less yummy cake.
