Preheat the convection mode microwave oven at 170°
Grease or line a baking pan with parchment paper
Whisk sugar and room temperature milk well.
When sugar dissolves add 3 tablespoon of oil and mix well to form an emulsion.
Sieve flour, baking powder and baking soda.
Add the dry ingredients in the milk, oil and sugar mixture.
Add lemon juice and lemon zest.
Mix well and make a lump free smooth batter.
Pour the batter in the greased mould and bake for 25 to 30 minutes.
The time depends on the type of your oven. Check after 25 minutes with a toothpick. It should come out clean, if not bake for some more time till done.
Let it cool down completely before slicing. Enjoy the eggless and butter less yummy cake.
