Ingredients

Serves : 4
  • For litti dough:- 1 1/2 cup wheat flour


  • 1/4 tsp baking powder


  • 1/4 tsp ajwain


  • 1/2 tsp salt


  • 2 tbsp ghee/clarified butter


  • 1/2 cup water ya as per need


  • For stuffing:- 1 cup sattu/roasted gram flour


  • 1/2 tsp ginger garlic paste


  • 1 medium size onion finely chopped


  • 1/2 cup coriander leaves


  • 1/2 tsp kalonji/onion seeds


  • 1/4 tsp carom seeds


  • 1 tbsp lemon juice


  • 2 stuffed red chilli pickle (any pickle)


  • 2 tbsp mustard oil


  • 1/4 tsp salt ya as per taste


  • 1/2 tsp jeera


  • For Chokha:- 2 medium sized boiled potatoes


  • 1 big rounded brinjal


  • 3 medium sized tomatoes


  • 4-5 garlic cloves peeled


  • 2-4 finely chopped green chillies


  • 1/2 piece of ginger grated


  • 2 medium sized onions chopped


  • 1 tbsp finely chopped coriander leaves


  • 2 tsp mustard oil


  • 1/4 tsp salt


  • 1 tsp lemon juice

Directions

  • For litti dough:-Firstly in a large big bowl take flour, baking powder, ajwain, salt and ghee.
  • Crumble and mix well making surw the ghee is combined well.
  • Now add water as required and knead the dough to smooth and soft. Cover with a wet cloth and keep aside.
  • For stuffing:- Firstly in a large bowl take sattu flour/gram flour roasted add in all spices and mix well.
  • Now add grated ginger, green chillies, coriander, lemon juice and mix well.
  • If it seems too dry add a tsp of oil and few drops of water to it. Texture should be moist and not dry or too wet.
  • For chokha:- boil the potatoes remove the skin and keep aside.
  • Roast brinjal and tomatoes and garlic in the oven or on the gas stove on medium flame from both sides until it becomes soft.
  • Peel of the burnt skin of the brinjal and tomato. Mash boiled potatoes, brinjal along with garlic and tomatoes together.
  • Add finely chopped onion, corainder leaves, grated ginger, salt, green chillies and mustard oil.
  • Mix all the ingredients with hands properly. Chokha is ready .
  • Make litti:- Firstly after the dough has rested for 20 minutes knead slightly.
  • Pinch a small ball sized dough press the edges and from a cup. place a ball sized dough.
  • Start pleating the dough making sure the stffing is secured well. Pinch off excess dough and roll well.
  • Litti is ready for baking.Now make all litti.
  • Preheated oven at 190 degrees.
  • Place all balls in a baking dish .
  • And bake them to for 30-40 minutes as per your oven .
  • Flip the side half way through you may have to do 2-3 times in between to get the even cooking done
  • Put chokha in bowl dip hot litti in melted ghee.
  • And serve with green coriander chutney and ghee.
