Oil-Free Savory Zucchini Cheese Muffins

  • All-purpose flour : 1 Cup/125 Grams

  • Zucchini: 1 medium (Grated)

  • Orange Bell Pepper: 1 small (Finely diced)

  • Cheddar Cheese: 1 cup (Grated)

  • Eggs: 2 Large

  • Pepper: 1 Teaspoon/As per taste

  • Salt: 1 Teaspoon/As per taste

  • Garlic Powder: 2 Teaspoons

  • Baking Powder: 1 Teaspoon

  • Red Chili Flakes: 2 Tablespoons


  • Intro: These Savory Muffins are pretty healthy & completely Oil-Free. Can be served as breakfast or as snack at Tea/Coffee Time. Good for traveling too. I used Orange Bell Pepper here. You may use Red or Yellow as well. Yields: 7-8 Standard size muffins.
  • Heat the oven at 200° C/400° F.
  • Combine the All-purpose flour, Baking Powder, Salt, Pepper, Garlic Powder & Red Chili Flakes in a small bowl.
  • Whisk the eggs in a large mixing bowl.
  • Add the grated Zucchini, diced Orange/Red Bell Pepper followed by the grated Cheese. Mix well with a spatula.
  • Add half of the All-Purpose flour mixture. Mix until combined using a spatula.
  • Add the remaining half of the Flour. Mix until combined well.
  • Line the cavities of the muffin pan with parchment paper liners.
  • Spoon the zucchini mixture into the prepared muffin pan until almost full.
  • Bake for 25-30 minutes. A toothpick inserted in the center should come out clean. If not, then keep the muffin pan back into the switched off oven for 5 minutes.
