Ingredients

Serves 12

  • All Purpose Flour 1 cups

  • Baking Soda 1 tsp

  • Baking Powder 1/2 tsp

  • Carrots: grated 1 1/2 cups

  • Eggs 2 nos

  • Oil 2/3 cups

  • Vanilla Essence 2 tsp

  • Sugar 3/4 cups

  • cinnamon powder 1 tsp

Directions

    Sift together flour,baking powder,baking soda ,carrots and cinnamon in a bowl and mix well. Set aside!

    In a large mixing bowl, whisk eggs and oil until well combined. Follow by adding sugar and vanilla essence and mix til sugar melts.

    Now add the flour carrot mix and fold well.

    Preheat oven to 350 degrees F.

    Line a muffin tin with cupcake liners. Grease them with oil or butter.

  • 06

    Pour the batter into the muffin trays and fill up to 2/3rd of the liners.

    Bake for 20-22 mins until the muffins have risen and turned golden brown.

  • 08

    Allow the cupcakes to cool completely.
