  • 1 cup Butter/Margarine (250 gms) 1 cup Sugar 5 Eggs 1 and half cups All Purpose Flour 2 tsp Baking powder 2 tsp Vanilla essence 1 tbsp Oil Frosting: 750ml Whip Cream 1 tsp Vanilla essence 3 tbsp Icing sugar Sugar syrup 12 or more Strawberries (slices) 1 Kiwi (slices) White Chocolate (shavings)

Directions

  • For cup measurement use same cup measuring butter. Beat butter and sugar till light and fluffy. Add one egg at a time beating in between to form peaks. Add vanilla essence and oil. Sieve flour and baking powder in a seperate bowl. Add three tablespoon of flour mixture to the batter at a time while continuing to mix till you are done with all the flour. Pour batter into a medium sized greased mould and bake in a pre heated oven at 170°C till done. Remove from oven and when cool down a bit remove from the mould. Let it cool down completely. Frosting: In one and half glass of hot water put a tablespoon of sugar and stir till sugar dissolved. In a big bowl put whip cream, icing sugar and essence then beat till peaks formed, chill in fridge. Cut cake in half horizontally or make three slices. Put one piece on a platter sprinkle sugar mixture then spread whip cream and put strawberries slices all over it. Place the other slice, repeat the process. Place another slice and sprinkle sugar syrup all over it, spread whip cream all over the cake, sprinkle chocolate shavings and decorate with whip cream rosettes or stars, kiwi and strawberry slices. NB: can use cherries as well, i prefer strawberries
