Ingredients
Serves 6
6 Chicken breasts whole or thin
4 Roma Tomatoes
1/2 red onion
1 lemon
1 tablespoon oregano
3 tbs Olive oil
6 tbs Feta cheese
6 tbs parsley
12 calameta olives
Directions
Marinate chicken for 15 minutes with 1/2 lemon juice, 1 tbs olive oil, 1 tbs oregano.
Make sauce to top Chicken. Heat 2 tbs olive oil and add diced red onion until translucent, add quartered tomatoes, black olives. Cook until tomatoes have been broken down.
Grill chicken breast
Top each breast with sauce and add Feta cheese and parsley
