Microwave Roasted Cauliflower with Toasted Pistachios

Ingredients

Serves : 4
  • 1 large cauliflower, broken into small florets


  • 1 small onion (sliced)


  • 1/3 cup olive oil


  • 2 cups fresh mixed herbs (Roughly chopped)


  • 1/2 cup pistachios (toasted & chopped)


  • 1 Tsp Cumin Powder


  • 1 Tsp Dried Oregano


  • 1 Tsp Dried Parsley


  • 1 Tsp Garlic Powder


  • 1 Tsp Red chili powder


  • 1 1/2 Tbsp lemon juice


  • 1/2 Tsp Salt


  • 1/2 Tsp Pepper

Directions

  • In a large bowl, combine the cauliflower florets, onion, olive oil, salt & pepper. Mix gently.
  • Place in a 9 OR 9.5 inches Microwave-Safe glass Pie Pan/Dish. Spread properly & evenly in a single layer.
  • Cover with Microwave Safe Lid or vented Plastic Wrap.
  • Select Power Level 8 (P8) & Set the Timer at 7 minutes. When done, let stand in the Microwave Oven for 2 minutes.
  • Gently mix the herbs, cumin, pistachios, lemon juice, more salt if required. (I used 2 cups of fresh cilantro, parsley, basil & mint).
  • Mound on a platter & serve.
  • *Note: Cooking Time depends upon the Cooking Power/Wattage of the Microwave Oven - Mine is 1200 Watts.
