Ingredients

Serves : 6
  • 1 cup cashewnuts powder


  • 1/2 cup sugar


  • 1/4 cup water


  • 2 tsp ghee/clarified butter


  • 6-7 drops of gel food color of your choice (optional)

Directions

  • Roast cashewnuts (about 1-1/2 cups) for 2 minutes stirring them every 30 seconds. Cool thoroughly till they are crisp and firm. If any moisture is seen on the cashews, pat dry with paper towels.
  • Grind in mixer in batches till fine powder is obtained without overdoing the grinding in which case it will turn into nut butter. Best way is to pulse and grind. Transfer the powder to a plate.
  • Combine sugar and water in a deep microwave safe bowl. Microwave for 3 minutes stirring every 30 seconds. Check for one-string consistency. Place a drop of syrup on the thumb and dip another finger in it. Gently pull away the fingers. If the string breaks immediately, then the syrup is not yet ready. Microwave further for 30 seconds or so.
  • Mix the cashew powder into the sugar syrup and stir for at least a minute or till it comes together.
  • Add ghee to the mixture and microwave again for a minute. Stir and mix well again. Keep stirring for couple of minutes.
  • Cover the bowl and leave the mixture to rest for 5 minutes. By now, it resembles a dough. Gather it together and knead it on clean kitchen platform.
  • Make two sections of dough and add colors of your choice. Knead well to blend the colors. Make shapes as per your creative instincts, or lay the dough between two parchment papers and roll it out thinly. Cut the barfi in diamond shapes.
