1 cup green moong, whole
1 large onion, chopped
1 heaped tsp ginger-garlic paste
1 tsp turmeric powder
1-1/4 tsp kashmiri red chilli powder
1/2 tsp chana masala powder
1/2 tsp garam masala powder
1 tsp salt or to taste
Juice of 1/2 lime
2 tbsp olive oil
3 cups water
Soak green moong in warm water for an hour at least.
Microwave moong with 2 cups water for 15 minutes, checking in between cooking time for water quantity. If water level goes low, add some more water.
Heat oil in microwave safe casserole and microwave for 1 minute on high power.
Add ginger-garlic paste, mix well with oil, and microwave on high power for 45 seconds. Stir well.
Add onions and stir well so oil coats the onions. Microwave onions on high power for 10 minutes, stirring them every 2-3 minutes.
Add all the dry masalas and mix well with onions. Microwave the masala for a minute.
Add green moong and mix well with the masala. Add remaining water and stir. Microwave again for 5 minutes till bubbling.
Carefully remove from oven and transfer to serving bowls. Serve with rice or roti.
