Ingredients

Serves 4

  • 300g risotto rice

  • 1 onion

  • 2 peppers

  • 100g peas

  • 1 vegetable stock cube

  • 1 litre of water

  • 1/2 tsp turmeric

  • 1/4 tsp garlic powder

  • 1 tsp smoked paprika

  • 1/2 tsp salt

  • 1/2 lemon

  • 2 tbsp olive oil

Directions

    Dice onions and peppers. Cook in a pan with oil for 5 mins.

  • 02

    Add garlic and smoked paprika and cook for a further 3 mins.

  • 03

    Boil the water and mix with stock cube.

  • 04

    Add the rice, water, turmeric and salt to the pan.

  • 05

    Bring to a boil, then reduce to a low heat. Cook for 20 mins.

  • 06

    Add peas and cook for further 15 mins.

  • 07

    Juice the lemon half over the dish and serve.
