Ingredients

Serves : 2
  • Baguette: 1/2


  • Tomato: 1 Large (Firm) Deseeded & Diced


  • Shallots: 2 (Diced)


  • Feta Cheese: 2 Tablespoons (Crumbled)


  • Mozzarella Cheese: 2 Tablespoons (Shredded)


  • Extra Virgin Olive Oil: 2 Tablespoons


  • Garlic Cloves: 6


  • Dried Oregano: 1/2 Teaspoon


  • Dried Basil: 1/2 Teaspoon


  • Fresh Basil: 4-5 Leaves (Roughly torn)


  • Salt: 1/4 Teaspoon


  • Black Pepper Powder: 1/4 Teaspoon

Directions

  • Intro: “Bruschetta (Italian: [bruˈsketta]) is an antipasto (starter dish) from Italy consisting of grilled bread rubbed with garlic and topped with olive oil and salt. Variations may include toppings of tomato, vegetables, beans, cured meat, or cheese. A popular dish is bruschetta with tomatoes; one recipe popular outside Italy involves basil, fresh tomato, garlic and onion or mozzarella. Bruschetta is usually served as a snack or appetizer. In some countries, the prepared topping is marketed as bruschetta.”
  • Combine the Olive Oil, Dried Oregano & Dried Basil in a small bowl. Set aside.
  • Combine the Tomatoes, Fresh Basil, Feta Cheese, Salt & Black Pepper Powder in a medium bowl. Set aside.
  • Place the Shallots & Garlic Cloves in a Baking Tray/Dish. Drizzle a few drops of Olive Oil on top. Stir.
  • Grill/Roast in a preheated Oven for about 20 minutes or until soft & golden. Stir once in between.
  • Cut the Baguette into half & slit it open. Place on a Baking Tray/Dish.
  • Sprinkle the Mozzarella Cheese evenly & Toast/Grill in a hot Oven lightly for a couple of minutes of just until the Cheese melts. We don’t want it too crisp.
  • Arrange it on a plate.
  • Top with the Roasted Shallots plus Garlic Cloves, Tomato plus Feta Cheese mixture. Drizzle the Olive Oil mixture.
  • Enjoy!
  • Note: I used Baguette here. You may use any Bread of your choice, preferably a Crusty Bread. Please feel free to increase or decrease the ingredients as per your preference. Typically, Bruschetta is a starter but it can be had as a meal too.
