Wholegrain flour 2 Cup
Grounded cumin 1 tsp
Sesame seeds 2 tsp (Optional)
Sea salt a pinch
Carrot, finely grated 1 large
Capsicum 1/2 grated
Onion 1 grated
Olive oil 5 Tbsp
Kasoori Methi 1 tsp
Water 1/2Cup or more depending on quality of flour
In a large bowl, mix all the dry ingredients (flours, cumin, sesame and salt).
Add Carrot,Capsicum, Onion and olive oil to the dry ones and mix until you form dough.
Roll the dough in a disk and cut your cookies .
Place them on a cookie tray lined with baking paper.
Preheat the microwave at convection mode at 180 deg C.
Bake for 20 minutes, until golden brown. Crispy Carrot Capsicum Cookies are ready to serve.
