Eggplant 2 Large
Water 1/2 Cup or more
Oil 2 tbsp
Onion 2 chopped
Ginger 1/2 inch
Garam Masala 1 tsp
Coriander Powder 1 tsp
Kashmiri red chilly Powder 1/4 tsp
Salt To Taste
Degi Mirch 1/2 tsp
Wash and Peel and cut the eggplants into cubes.
In a microwave safe covered bowl microwave eggplants with water for 10 minutes.
Take it out and cool down and mash it .
In another bowl take oil with all the spices and microwave for 23 Minutes.
Now add mashed eggplant , salt and water. Microwave For 10 minutes. Stir in between.
Garnish with Coriander leaves.
