Rice vermicelli 200 gms
Spring Onions white Chopped 1/2 cup
Green peas 1/2 cup
Carrot diced 1/2 cup
Capsicum 1/2 cup
Coriander Finely Chopped 1/2 cup
Sri racha sauce - 1-2 tbsp
Brown Sugar/Honey 1 tbsp
Juice of 1 lemon
Sesame Oil /Olive Oil 1 tbsp
Garlic clove 1-2 finely chopped
Soak vermicelli in water for about 5 mins in a microwave safe bowl with a lid on it.
In my 900w microwave on full power it took 4-5 mins to cook the vermicelli .let them soak in hot water for additional 5 mins more if not cooked completely.
Keep aside vermicelli to cool for 5 minutes or to prevent from over cooking run it through tap water.
In a wide bowl microwave safe bowl add veggies with vermicelli and dressing on it and mix well. Toss the veggies with vermicelli.
Serve hot with chopped Coriander on top.
