Ingredients

Serves : 6
  • For the Pav - All purpose flour 2 Cups


  • Yogurt 3 tbsp


  • Baking soda 1 tsp


  • Baking powder 1/4 tsp


  • Oil 2 tbsp


  • Basil herbs 1 tbsp


  • Sesame seeds 2 tbsp


  • Fresh Coriander 1/2 cup finely chopped


  • Chilli flakes 1 tbsp


  • For Garlic Chutney- Garlic cloves 8-10


  • Kashmiri Red Chillies 4-5


  • Salt 1/4 tsp


  • Dry Mango Powder 1/2 tsp


  • For Stuffing- Potatoes Boiled and mashed 4


  • Green Chillies 2, finely chopped


  • Ginger, grated 2 tsp


  • Turmeric Powder 1/4 tsp Red Chilli Powder 1/4 tsp


  • Coriander Powder 1/2 tsp


  • Salt 1 tsp Dry Mango powder ¼ tsp


  • 6-7 Curry Leaves


  • Mustard Seeds 1/4 tsp

Directions

  • In a mixing bowl take yogurt , add baking soda and baking powder ,mix it well and rest it for 5 minutes.
  • Sift flour in another bowl and add salt and chilly flakes to it. Add oil and yogurt mix to it and mix well.
  • It will form a sticky dough. Oil it well and Cover it with cling film and leave for proving in warm place.
  • It will almost become double in size after about 1 hour.
  • After an hour gently punch the dough and release the air bubble. Now gently press the dough and make six equal balls of it.
  • Meanwhile prepare the stuffing for it .
  • In a frying pan heat oil and add mustard seeds, curry leaves, green chillies, ginger and saute for a minute , Now add the potatoes and mix well.
  • Add turmeric powder, red chilly powder, coriander powder, salt and mix well.
  • Transfer the stuffing into a bowl and let it cool. Once cooled down, take a small amount of stuffing and press with palm gently and and add a little amount of Garlic Chutney in the middle and roll into a small ball.
  • After an hour gently punch the dough and release the air bubble. Now gently press the dough and make six equal balls of it.
  • Flatten the Dough and place prepared stuffing in center and roll it to form round ball.
  • Place these prepared Pavs in a microwaveable tin and rest it for 30 minutes.
  • Preheat the microwave at Cooking and again at short bread settings and bake it ( Apprx 225 deg C) for 20 minutes.
