3/4 cup semolina
3/4 cup sugar
1/2 cup milk
1/2 cup curd
2 tbsp ghee/butter/oil
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp vanilla extract
1/2 tsp cardamom powder
2 tbsp nuts powder(cashews almonds pista)
1 pinch saffron
1/2 cup desiccated coconut
Gether all ingredients at one place.grease cake pot with little oil/butter and keep aside.Also soak saffron in little milk and keep aside.
Now in a blender jar add sugar , milk ,ghee/butter/oil(any one)and blend till smooth.
Now in a bowl add curd , baking powder , baking soda and whisk well.
Add blended mixture (milk sugar butter)to the curd bowl and mix well .
Now add Semolina ,desiccated coconut and mix well again.
Now add cardamom powder , vanilla extract , saffron soaked milk and nuts powder .mix well.
Now pour the prepared batter into a greased pan and bake for 40-45 mins in preheated microwave oven on 180℃ .convection mode.
check by inserting toothpic.and let it cool before cutting and serving.(cut it into desired pieces)
Less oily , delicious Semolina covonut cake is ready to serve.
