Ingredients

Serves 4

  • 500 gm large Baigun

  • 1/2 cup water

  • 3-4tbsp desighee/oil

  • 2 tbsp lightly fried onion n garlic

  • 1 piece finally chopped ginger

  • 1/2 tsp roasted jeera powder

  • 1 tsp dhaniya powder

  • 1/2 tsp turmeric powder

  • A few currypatta chopped (3-4leaves)

  • 4 finely chopped green chillies

  • Salt to taste 1/2 tsp approximately

  • 1 tbsp sugar

  • 1 cup beaten sour yogurt

  • Dhaniya leaves for garnish 4-5 sprigs chopped

Directions

    Cut brinjals into 4 pieces.

  • 02

    Microwave brinjal covered with water for 15 minutes, stand 5 minutes.

    Cool, peel and mash it or chop it very fine with the water.

  • 04

    Now in another bowl put ghee add all the ingredients upto green chillies and microwave for 3 minutes.

    Now add brinjal, salt and 1/2 cup water, microwave for 15 min, stir in between. let stand till ready.

    Now lastly add salt, sugar n beaten yogurt to it and microwave for 3 minutes.

    Garnish with coriander/dhaniya leaves... serve hot.
