500 gm large Baigun
1/2 cup water
2 tbsp lightly fried onion n garlic
1 piece finally chopped ginger
1/2 tsp roasted jeera powder
1 tsp dhaniya powder
1/2 tsp turmeric powder
A few currypatta chopped (3-4leaves)
4 finely chopped green chillies
Salt to taste 1/2 tsp approximately
1 tbsp sugar
1 cup beaten sour yogurt
Dhaniya leaves for garnish 4-5 sprigs chopped
Cut brinjals into 4 pieces.
Microwave brinjal covered with water for 15 minutes, stand 5 minutes.
Cool, peel and mash it or chop it very fine with the water.
Now in another bowl put ghee add all the ingredients upto green chillies and microwave for 3 minutes.
Now add brinjal, salt and 1/2 cup water, microwave for 15 min, stir in between. let stand till ready.
Now lastly add salt, sugar n beaten yogurt to it and microwave for 3 minutes.
Garnish with coriander/dhaniya leaves... serve hot.
