Description

Focaccia is a flat oven‑baked, wholesome Italian bread product similar in style and texture to pizza crusts.  This is a healthy version as oats and quinoa are used in the base and is topped with herbs and vegetables.

Ingredients

Serves : 2
  • 1/2 cups oats flour


  • 1/2 cups cooked quinoa


  • 1/4 tsp all purpose flour


  • 1 tbsp instant active dry yeast


  • 2 cups warm water or as required


  • 1/2 tsp salt


  • 1/2 tsp sugar


  • 3 tbsp olive oil


  • 2 tbsp milk powder


  • 1/2 tsp oregano


  • 1 nos medium sized onion finely chopped


  • 1/2 nos capsicum finely chopped


  • 2 nos cloves garlic finely chopped


  • 1/2 tsp rosemary


  • 1 tsp parsley


  • 1 tbsp parmesan cheese

Directions

  • Preheat oven to 180 degrees C
  • Dissolve yeast and sugar in half cup of warm water and leave it for 5 minutes until it becomes frothy.
  • Take a large mixing bowl and combine the flours, quinoa, milk powder, salt, 2 tablespoons olive oil and yeast mixture. Mix them together using your hands.
  • Now gradually add warm water to the mixture until a firm dough would form, the dough should be soft and smooth.
  • Add some flour in the end if necessary so that dough would not stick to your hands.
  • Brush the dough with olive oil from top and leave it aside for 30 min to rise in an air tight container.
  • Then again stretch and knead the dough to make it more flexible.
  • After that spread the dough in circular shape for that purpose you may take a large pizza pan.
  • Sprinkle capsicum, oregano, rosemary, parsley, onion, garlic and parmesan cheese on top. Place it into a preheated oven for 10-15 minutes, until it becomes light golden in colour.
  • Let it cool for about half an hour on a wire rack or a plate with holes or a strainer, before slicing.
  • Its ready to serve.
