Ingredients

Serves : 6
  • 1 1/4 cups all purpose flour


  • 1/2 cups brown sugar


  • 2 nos apples, peeled and cored


  • 1 cups oats


  • 1 tsp cinnamon


  • 1/2 tsp baking soda


  • 110 gms soft unsalted butter


  • 1/4 tsp salt


  • 1/2 cups chopped nuts


  • 2 nos eggs at room temperature

Directions

  • preheat oven to 180 degrees celsius and line the baking tray with parchment paper
  • in a bowl mix flour cinnamon , baking soda and salt.
  • add oats to the bowl .mix well and keep it aside
  • blend butter and sugar in a bowl until creamy
  • add eggs one at a time and blend until smooth creamy and pale.blend for 30 seconds after adding each egg before adding next
  • add Vanilla extract and blend well
  • gradually add the dry ingredients and mix well
  • add grated apple and chopped nuts , fold gently
  • drop the dough on to baking tray and shape like a log using spatula
  • bake for 20 to 22 minutes and cool for 30 minutes on the tray
  • slice into half inch diagonal pieces
  • place the slices onto the baking tray and bake for 12 to 16 minutes until dry and crispy in a preheated oven at 180 degree Celsius
  • allow to cool for 15 minutes on the tray and then cool on wire rack completely
  • store in a tight containers. Serve biscotti with tea or coffee
