preheat oven to 180 degrees celsius and line the baking tray with parchment paper
in a bowl mix flour cinnamon , baking soda and salt.
add oats to the bowl .mix well and keep it aside
blend butter and sugar in a bowl until creamy
add eggs one at a time and blend until smooth creamy and pale.blend for 30 seconds after adding each egg before adding next
add Vanilla extract and blend well
gradually add the dry ingredients and mix well
add grated apple and chopped nuts , fold gently
drop the dough on to baking tray and shape like a log using spatula
bake for 20 to 22 minutes and cool for 30 minutes on the tray
slice into half inch diagonal pieces
place the slices onto the baking tray and bake for 12 to 16 minutes until dry and crispy in a preheated oven at 180 degree Celsius
allow to cool for 15 minutes on the tray and then cool on wire rack completely
store in a tight containers. Serve biscotti with tea or coffee
