Ingredients

Serves : 2
  • 1 bowls finely chopped vegetables (carrot, capsicum, peas, cabbage, beans)


  • 1 cups oats


  • 1 nos onion


  • 2 nos green chillies slitted


  • 1/2 tsp mustard seeds


  • 1/2 tsp cumin seeds


  • 1 tsp urad dal/moong dal


  • 4-5 nos cashews


  • 1 tbsp leaves curry


  • 1/2 tsp ginger grated


  • 2 tbsp fresh coriander chopped


  • 1 tbsp oil


  • 1 tbsp desiccated coconut


  • 1 nos lemon juice


  • 1 tsp salt


  • 1/2 tsp turmeric powder

Directions

  • First dry roast the oats in a pan and keep aside..keep all ingredients aside.
  • In a pan heat oil...Add mustard seeds, urad dal, cumin seeds, green chilli, ginger, cashews and curry leaves...Stir till splutter.
  • Add onion and saute till light pink in colour...Add all finely chopped veggies...Stir for a min...On medium flame....Add salt and turmeric powder...stir well...add little water and cover with lid.... Simmer for 5 min...till vegetables gets soft.
  • Add 1 cup of water...And bring it to a boil...Add roasted oats...Stir well...Water will absorb...Cover the pan with lid...And cook for 5 mins..
  • In last add fresh coriander, coconut powder and lemon juice.Mix nicely.And switch off the flame
  • Tasty, and healthy veg- oats upma is ready to serve.Serve hot.
