Ingredients

  • finely chopped vegetables (Carrot, capsicum, peas, cabbage, beans) 1 bowls

  • Oats 1 cups

  • onion 1 nos

  • green chillies slitted 2 nos

  • mustard seeds 1/2 tsp

  • cumin seeds 1/2 tsp

  • urad dal/moong dal 1 tsp

  • cashews 4-5 nos

  • leaves curry 1 tbsp

  • ginger grated 1/2 tsp

  • Fresh coriander chopped 2 tbsp

  • oil 1 tbsp

  • desiccated coconut 1 tbsp

  • lemon juice 1 nos

  • Salt 1 tsp

  • turmeric powder 1/2 tsp

Directions

    First dry roast the oats in a pan and keep aside..keep all ingredients aside.

    In a pan heat oil...Add mustard seeds, urad dal, cumin seeds, green chilli, ginger, cashews and curry leaves...Stir till splutter.

    Add onion and saute till light pink in colour...Add all finely chopped veggies...Stir for a min...On medium flame....Add salt and turmeric powder...stir well...add little water and cover with lid.... Simmer for 5 min...till vegetables gets soft.

    Add 1 cup of water...And bring it to a boil...Add roasted oats...Stir well...Water will absorb...Cover the pan with lid...And cook for 5 mins..

    In last add fresh coriander, coconut powder and lemon juice.Mix nicely.And switch off the flame

    Tasty, and healthy veg- oats upma is ready to serve.Serve hot.
