Eno fruit salt-1 pinch
Gram flour-1/2 cup
Green Corriender and mint chutney-1/2 cup
Sweet turmrind chutney-1/2 cup
Onion-1 finally chopped
Potato-2 boiled,peeled and mashed
Salt-1 tsp or as per taste
Sev for garnish-1/2 cup
Red chilly powder-1tsp
Cumin powder-1 tsp
Chaat masala powder-1tsp
Green chilly chopped-2
Ginger chopped-1 inch
Green Corriender chopped-1 tsp
Oil-2 cup or as required
Wash and dry the spinach leaf
In a bowl combined gram flour,salt and Eno along with sufficient water to make a dropping inconsistency batter. Mix well and keep aside.
In a kadhai heat oil and dip each palak leaf in the gram flour batter and coat it completely. Gradually put them into the hot oil and deep fry until golden brown in colour on low flame.
Drain them on an absorbent paper. Fry all the spinach leaves like this.
To make the palak patta chaat arrange the fried palak patta on a plate. Place onion and potato on each of the fried palak leaves.
Next spread a tea spoon of each green chutney and sweet turmrind chutney on paalak patta .top this with a teaspoons of curd. Sprinkle green chilly and ginger.
Finally sprinkle some red chilly powder,Cumin powder,salt and some chaat masala.
Garnish with sev and serve immediately.
