Ingredients

Serves : 3
  • 1big size eggplant slices


  • 2 tsp spiced rice batter


  • 1/3 tsp salt ( as per taste)


  • 1/4 tsp turmeric powder


  • 1/2 tsp chilli powder


  • 1/3cup pizza sauce


  • 1/2cup onion chopped


  • 1/2cup capsicum chopped


  • 1/2 cup chopped tomato


  • 1/2cup paneer cut in cube sized


  • 1 cup mozzarella cheese


  • 1 tsp mustard oil


  • 1tsp chilli flakes


  • 1tsp oregano


  • For spiced batter: 1 cup soaked rice


  • 10-12 cloves of garlic


  • 1.5 inch ginger


  • 2green chilli


  • 1 tsp cumin seeds


  • 3-4 tsp water

Directions

  • Prepare the rice batter by grinding all the ingredients of it.
  • In a plate just take 2tsp batter and mix turmeric powder, chilli powder and salt in it.
  • Dip one side of the eggplant slice in it and on the other side spread pizza sauce, cheese, paneer and all the veggies and over it another layer of cheese on it.
  • Heat a tawa and brush oil on it and then carefully put the eggplant slices on it and cover it for 4-5minutes.
  • Now your cheesy eggplant slices are ready.
  • Sprinkle some chilli flakes and oregano over it and serve hot.
