Ingredients

Serves : 2
  • Sandwich / regular bread - 6 - 8 pieces


  • Paneer / cottage cheese - 250 gms


  • Ginger - 1/2 "


  • Green chillies - 3 - 4 / to taste


  • Coriander leaves - 1/4 cup chopped


  • Salt - 1/2 tsp


  • Ghee/ butter/ oil - 3 tbsp according to your preference

Directions

  • Put green chillies, ginger, coriander leaves in a grinder jar and make coarsely paste without water for one minute on low to medium speed.
  • Now add cottage cheese, salt and again grind for 2 minutes till it becomes smooth paste.. Sift mixture in a bowl.
  • Cut brown sides of each bread. Spread little butter one side of each bread. Now take one or two tbsp paneer mixture and spread all over one bread piece. It must be thick and evenly on the bread then cover it with another piece of bread and press it gently.
  • Repeat this process with rest of pieces. Now it's ready for shallow frying / grilling.
  • Heat a heavy bottom pan / skillet on medium heat. Now put one tsp butter / ghee / oil on pan then reduce heat on low flame. Put one sandwich pieces on pan and fry both sides of bread till golden brown colour. It will take 2 minutes for making one sandwich, you can make 2 if skillet size is big.
  • Repeat this process for rest of pieces. Take a sharp knife and cut sandwiches in square / tringles as per your preference. Serve hot with tomato sauce and any kind of soup as per your choice. I love to have with lemon coriander soup.
