Balti Masala Prawns Fry

Ingredients

250g prawns
1 tsp garlic powder
1/2 tsp ginger-garlic paste
1 tsp red chili flakes
1 tsp red chili powder
1 tsp coriander powder
1 tsp soy sauce
1/2 tsp vinegar
3 tbsp rice flour 3 tsp breadcrumbs
1-1/2 tsp Salt or to taste
1/4 cup rice flour
For balti garam masala—2 tsp coriander seeds
2 tsp fennel seeds
1 tsp cumin seeds
1 tsp black mustard seeds
1/2 tsp cloves
1/2 tsp cardamom seeds of black cardamom
1/2 tsp nigella seeds (kalonji)
3 bay leaves
2 cinnamon sticks broken
2 tsp red chili flakes
1/2 tsp ground nutmeg
Directions
Dry roast whole spices except chili flakes and nutmeg till aromatic. Add chili flakes and nutmeg for final roasting time. Grind to fine powder.
Clean prawns (remove shells and black thread). Wash and drain the water.
Apply all the ingredients except rice flour and breadcrumbs. Marinate prawns for at least 30 minutes.
Combine rice flour and breadcrumbs. Roll the prawns in breadcrumbs and again dust them with plain rice flour.
Shallow or deep fry prawns till golden. Remove to paper towels to drain excess oil.
