TOMATO - CARROT SOUP

Ingredients

Serves 4

  • Carrot - 1/2 kg

  • Tomato - 250 gms

  • Potato - 1 medium

  • Onion - 1 medium

  • Ginger - 1"

  • Garlic - 5 cloves

  • Mint leaves - 1 tsp

  • Butter - 1 tbsp

  • Black pepper powder - 1/2 tsp

  • Salt - 1 tsp

  • Water - 3 cup

    Peel off carrot, potato, onion and ginger then wash it. Now cut into medium size. Wash tomatoes and cut into 4 pieces.

    Take a pressure cooker. Now put all vegetables, garlic cloves, and 2 cup water then cook on medium heat till 3-4 whistles. Let it cool down naturally.

    Now put all boiled vegetables, little water in liquidiser and make fine & smooth paste. Now filter it through sieve. You can add a cup of water while this process as your preference.

    Again put this liquid in a deep pan / kadai and boil for 10 minutes on high flame. Add black pepper powder, mint leaves, butter, salt and stir several times while cooking.

    Switch off the gas stove and cover the pot with lid.
