  • Grated carrot 1 cup

  • Semolina 1 cup

  • Yogurt 1/2 cup

  • Sugar 1 tbsp

  • Salt 1/4 tsp

  • Water 1 cup

  • Oil 2 tbsp

  • Lemon juice 1 tsp

  • Eno fruit salt 1 tsp

  • Hung curd 2 tbsp

  • Black pepper powder 1/4 tsp

  • Kashmiri mirch powder 1 tsp

  • Green chutney 2 tbsp

  • For tempering black mustard seeds 1 tsp


  • METHOD In a bowl mix together  semolina, yogurt, sugar, salt,  lemon juice, oil and water to make a smooth paste Add grated carrot and kashmiri mirch powder and mix well. Keep aside for 15 minutes. Add eno fruit salt in the mixture just before making carrot  savory muffins and mix well. Pour the batter in a greased mould  and microwave it for four mins Heat oil in a pan for tempering and add mustard seeds Pour it over the thick curd and also add salt and black pepper powder and mix well Spread thick curd at the top of the carrot muffins. Now add  green chutney at the top
