1 cup urad dal/3 cup dahi or yoghurt/ Refine oil for deep frying/ 2 tsp roasted jeera ( cumin) powder/2 tsp red chilli powder/1 teaspoon sugar/ salt/ FOR TADKA 1 TSP MUSTARD SEEDS/3 WHOLE RED CHILLI/A FEW CURRY LEAVES
Clean wash and soak the dal for minimum 7 to 8 hours./separate the water and grind the dal with as minimum water as possible/ The paste should not be v fine/Take out the paste in a big bowl/ Beat the mixture for 5 minutes till light & fluffy./ This will help your vada soft/Add salt to the batter/Heat oil for deep frying/Drop small small ball of batter into the oil/ with the help of your hand you can make a hole into the vada for frying uniformly./Fry it in medium heat till golden brown/In abig bowl add 3 cup warm water / Soak the fried vada in it for 10 minutes/In the meantime beat the curd/Squeeze out the vada from the water & drop all the vadas into dahi or curd / add salt sugar and red chilli powder/ For tadka....heat oil ina pan add mustard seeds and curry leaves/ allow to splitter/ remove it from gas and pour it into your prepared dahi vada/ Now its ready as a starter to seve your guests or loved ones.
