For puri
Take wheat flour, maida and rava and add little water at times also add salt and make a dough.
Cover and rest for 15 minutes
The dough should not be soft or hard.
Now make balls and roll. With a cookie cutter cut it into small circles.
In a medium heat fry the puris and keep it in a air tight container.
For the MASALA
Smash the boiled potatoes and boiled matar. Add salt, chat masala, jaljeera powder, mint leaves paste, jeera red chilly powder and salt and mix it nicely.
Mint leaves paste- (mint leaves, coriander leaves, green chilly and lemon juice and add some water and blend it into smooth paste)
Tamarind pani
Take 1 cup water and soak tamarind for 15 - 20 mins
In a large vessel add 1-2 liter of water. Add salt, black salt, jeera chilly powder, chat masala, jaljeera powder, mint paste and tamarind water
Mix it nicely and add half lemon juice
Dahi pani/curd water
Take curd and whisk it nicely add about 1 ltr water and some salt and mix it.
Take a small pot , heat some oil. Add mustard seeds when it starts spluttering add curry leaves. After a min add the curd water.
Your tasty pani puri is ready with tamarind water and dahi pani. Enjoy guys
