Ingredients

Serves : 4
  • For puri-1


  • Wheat flour 1 cup


  • Rava 1 cup


  • Maida 1/4th cup


  • Water 1/2 cup


  • For tamarind water-2


  • Tamarind 3-4


  • Jaljeera powder 2tbsp


  • Chat masala 1tbsp


  • Mint leaves 1 cup


  • Coriander leaves 1cup


  • Green chilly 1


  • Lemon 1/2


  • Black salt 2tsp


  • Jeera red chilly powder 1tsp


  • For curd water-4


  • Curd 2 cups


  • Curry leaves 2


  • Mustard seeds 2tsp


  • For masala -5


  • Boiled potatoes 8


  • Matar soaked 1 cup

Directions

  • For puri
  • Take wheat flour, maida and rava and add little water at times also add salt and make a dough.
  • Cover and rest for 15 minutes
  • The dough should not be soft or hard.
  • Now make balls and roll. With a cookie cutter cut it into small circles.
  • In a medium heat fry the puris and keep it in a air tight container.
  • For the MASALA
  • Smash the boiled potatoes and boiled matar. Add salt, chat masala, jaljeera powder, mint leaves paste, jeera red chilly powder and salt and mix it nicely.
  • Mint leaves paste- (mint leaves, coriander leaves, green chilly and lemon juice and add some water and blend it into smooth paste)
  • Tamarind pani
  • Take 1 cup water and soak tamarind for 15 - 20 mins
  • In a large vessel add 1-2 liter of water. Add salt, black salt, jeera chilly powder, chat masala, jaljeera powder, mint paste and tamarind water
  • Mix it nicely and add half lemon juice
  • Dahi pani/curd water
  • Take curd and whisk it nicely add about 1 ltr water and some salt and mix it.
  • Take a small pot , heat some oil. Add mustard seeds when it starts spluttering add curry leaves. After a min add the curd water.
  • Your tasty pani puri is ready with tamarind water and dahi pani. Enjoy guys
