Drain & flake the Salmon with the help of a fork.
Combine all the above ingredients (except oil & bread crumbs) in a bowl.
Place bread crumbs in a plate. Shape salmon mixture into croquettes about 3 inches long & 1 inch wide.
Roll croquettes in bread crumbs to coat. Refrigerate for 15-20 minutes or until set. *Makes about 18*
Heat oil in a Wok/Kadhai over medium-high heat.
Carefully place croquettes in oil, 3-4 at a time. Deep fry for 2-3 minutes or until golden. Drain on paper towels.
Serve immediately with your favorite dipping sauce.
