Preheat oven to 400 deg f (200 deg c).
Combine all the dry herbs and spices with olive oil in a small bowl.
Combine all the cheeses together in a bowl and toss lightly.
Line a baking with ovenproof parchment paper. Roll out the puff pastry on to the parchment paper.
Cut the pastry in 6 equal sized squares.
Brush the squares with oil infused herbs. Lay a single tomato slice in the center of the square.
Overlap two ends of the pastry tightly. Repeat procedure for the rest of the squares.
Brush the pastry with remaining olive oil on the outsides of the pastry.
Bake in the oven for 15-20 minutes. Remove from oven and cool on wire rack.
Serve with your choice of dip or sauce.
