Ingredients

  • 8 ozs small shell noodles 1 tablespoon oil 2 onions chopped 2 garlic cloves crushed 3 teaspoons of Madras Curry paste 1 pound of mince beef or lamb 1 x 15oz tin of Tomatoes - blended for a few seconds with the juice 2 beef bouillon cubes 2 teaspoons tomato puree 1 teaspoon worcestershire sauce 1/2 teaspoon dried oregano salt and pepper to taste 3 ounces of grated cheddar cheese an extra 3 tablespoons of grated cheese to add on the top

    Cook the pasta partially so that its still as bit firm in the middle wash and leave to cool then put in the base of a casserole dish. Heat oil in a medium saucepan and add the Onions, garlic an curry paste and stir for a few minutes. Add the meat and stir with a fork until the meat is no longer pink. Add the blended tin of tomatoes, stock cubes, tomato paste, worcestershire sauce, Oregano salt and pepper and stir well - Simmer on low heat for about 30 minutes. Add the grated cheese and stir until its melted thicken with a little cornflour if its still a bit on the thin side. Cover the noodles with the pasta sauce - adding the extra cheese on top Cook in a moderate oven - around 180c for 30 minutes and serve
