 Omana Pathiri ഓമന പത്തിരി / Egg Filled Pancake is a typical Malabar snack which is usually prepared in Ramadan season and served as Iftar snack. There are different pathiries named kaipathiri, neriya pathiri etc. Omana Pathiri is very delicious and easy to make snack.

Ingredients

Serves : 5
  • For the batter:- Maida - 1 cup


  • Egg - 1 (nos)


  • Water - 1 glass


  • Salt - 1 pinch


  • For the filling:- Egg - 2 (nos)


  • Onion - 1 (chopped)


  • Green Chilly - 2 (chopped)


  • Ginger garlic - 1/4 teaspoon (chopped)


  • Turmeric Powder - 1/4 teaspoon


  • Chilly powder - 1/2 teaspoon


  • Garam masala - 1/4 teaspoon


  • Tomato - 1(chopped)


  • Salt - 2 pinch


  • Coconut Oil - 21/2 tablespoon

Directions

  • To prepare the batter, mix maida, egg, and salt in a bowl. Add water slowly and mix well with a beater spoon until no lumps are found. (The consistency should be dosa batter).
  • Heat a non-stick pan and pour one ladle full of batter and spread the batter in a round motion. Cook for 2 minutes on medium flame. The pancake is ready.
  • Heat oil in a pan add chopped onion and saute till the onion turn to light brown. Add ginger, garlic and green chilly saute till the raw smell goes off; then add the chilly powder, turmeric powder, garam masala powder and saute till raw smell goes off.
  • Next, add chopped tomato & saute till they become soft. Sprinkle enough salt and mix well.
  • Add beaten egg to the masala and scramble it well and make a dry masala. Switch off the flame and keep it aside.
  • Put some filling into a pancake and roll it tightly. Repeat the same process with all the remaining pancakes and egg filling.
