1 medium carrot or about 10 baby carrots
1 cup of lettuce
1/2 cup of chicken breast
1.5 tbsp of panko or bred crumbs
2-3 tbsp of greek yogurt
1 tbsp of olive oil
1 tsp of chopped dill
1 tbsp of graated parmesan or any cheese you like
2 cloves of garlic
Wash and slice the carrots.
Cut the chicken in small cubes.
Put them in a pan with some oil and sote them until they start caramelizing.
In the time start preparing the lettuce. Wash it and cut it into bite size pieces.
To make the dressing you'll need to put the yogurt into a small bowl and add a little olive oil, dill, salt ,pepper and a little lemon juice and lemon zest to taste.
Cut small or crush the garlic and add it to the yogurt.
When the carrots and chicken breast are done add the bread crumbs and mix so it covers them equally.
Putt a little dressing at the bottom of a big bowl. Add the salad pieces and pour the rest of the dressing on top. Add the carrots and chicken breast coated in bread crumbs and add some parmesan on top.
You can eat it with bread sticks as you can see in the image or with toast or normal bread.
