Wash and peel all vegetables
Cut Potatoes, Onion, Brinjal in four as per picture.
Cut slit in Okra longitudinally
Put all spices and fresh coriander/mint leaves, garlic in blender. Add 3-4 TSP water and blend into fine paste.
Add 3-4 TSP cooking oil in a pan and fry the masala paste. Keep stirring for about 4-5 minutes on medium heat
Generously stuff the masala in vegetables and close the cut vegetable and remove excess masala. See picture for details.
In a pan add 3-4 TBSP cooking oil. Carefully add all vegetables to the pan except Okra. See picture for details.
Cover the pan add cook for about 5 mins.
Add 1/2 Cup water, cover pan and cook for about 10 mins on low heat.
Add Okra to the pan, add 1/2 Cup water, cover and cook for another 10 minutes'on low heat.
When water dries up, check if Potatoes are cooked. Entire cooking is on low heat.
Careful remove each vegetable and serve.
