Ingredients

Serves : 2
  • 1 cup Macaroni, boiled


  • 1 Tbsp Olive oil


  • 1 garlic clove, crushed


  • 1/4 cup Red Cabbage, shredded


  • 1/4 cup Bell Peppers, diced


  • 1/4 cup Cucumber, diced


  • 1/4 cup Boiled Corns


  • 1/4 cup sliced Onions


  • 1/4 cup diced Cherry Tomatoes


  • For the dressing- 1/2 Tsp Black pepper powder


  • 1 Tsp Oregano


  • 1 Tbsp Olive Oil


  • 1 Tsp Honey


  • 1/2 Tsp Red Chilli flakes


  • 1 Tbsp Tomato Puree or ketchup


  • 1 Tsp Lemon Juice

Directions

  • Heat Oil in a pan, add garlic, red cabbage and bell peppers. Saute it for 2 minutes on a high flame, till the veggies are soft.
  • Now remove it from the flame and keep it aside.
  • Meanwhile, in a bowl add cucumbers, onions, tomatoes, corns, macaroni and sauteed vegetables. Toss it.
  • For the salad dressings- mix honey, olive oil, tomato puree, herbs, chilli flakes, black pepper powder, salt and lemon juice.
  • Mix it well. And pour the dressing over the salad.
  • Toss the salad. And refrigerate it for 30 minutes, before serving.
  • Serve it chilled.
