Ingredients

Serves : 2
  • 2 cups Corns kernels


  • 1 Tbsp Olive oil


  • 1/4 cup Spring Onions, chopped


  • 1/2 cup Bell Peppers [green, yellow and red], chopped


  • 1/2 cup Cherry Tomato, diced


  • 1/4 cup Cilantro or Coriander


  • 2 Tbsp Lime Juice


  • 1 Tsp Mixed Herbs


  • 1/2 Tsp Red Chilli Flakes


  • 1/4 Tsp Black Pepper Crushed


  • 1/4 Tsp salt


  • 1/4 cup Cheddar Cheese

Directions

  • Heat oil in a pan. Add spring onions and bell peppers. Saute it on a low flame.
  • Once the bell peppers get soft add in the corns. Mix it well. Saute for a minute.
  • Add in salt, red chilli flakes, herbs, cilantro and crushed black pepper.
  • Squeeze in the lemon juice.
  • Add cheese. Mix it quickly and remove it from the flame. You will see that the cheese gets melt.
  • Lastly, add the tomatoes toss it and serve it.
  • Sprinkle some more cheese and cilantro while serving.
  • It goes well with Nachos or even with Crackers.
