2 cups Corns kernels
1 Tbsp Olive oil
1/4 cup Spring Onions, chopped
1/2 cup Bell Peppers [green, yellow and red], chopped
1/2 cup Cherry Tomato, diced
1/4 cup Cilantro or Coriander
2 Tbsp Lime Juice
1 Tsp Mixed Herbs
1/2 Tsp Red Chilli Flakes
1/4 Tsp Black Pepper Crushed
1/4 Tsp salt
1/4 cup Cheddar Cheese
Heat oil in a pan. Add spring onions and bell peppers. Saute it on a low flame.
Once the bell peppers get soft add in the corns. Mix it well. Saute for a minute.
Add in salt, red chilli flakes, herbs, cilantro and crushed black pepper.
Squeeze in the lemon juice.
Add cheese. Mix it quickly and remove it from the flame. You will see that the cheese gets melt.
Lastly, add the tomatoes toss it and serve it.
Sprinkle some more cheese and cilantro while serving.
It goes well with Nachos or even with Crackers.
