Ingredients

Serves 1

  • Green Cabbage (Shredded) 1/2 cups

  • Red/Purple Cabbage (Shredded) 1/2 cups

  • Carrots (Shredded) 1/2 cups

  • Romaine Or Iceberg Lettuce (Roughly torn) 1/2 cups

  • Arugula Lettuce (Roughly torn) 1/2 cups

  • Red onion Small (Thickly Sliced) 1 nos

  • Almonds(Toasted & Slivered) 1/2 cups

  • Dried Cranberries 1/2 cups

  • Chicken breast 1 nos

  • Salt 1/4 tsp

  • Apple Cider Vinegar 2 tbsp

  • Soy sauce 3 tbsp

  • Extra Virgin Olive Oil 1/4 cups

  • Sesame oil 1/4 cups

  • Honey 2 tbsp

  • ginger 1 inch

  • garlic 3 nos

  • White Sesame Seeds 2 tbsp

Directions

    Trim the fat from the Chicken Breast.

    Wash thoroughly. Pat dry with paper towels.

    Prick it with a fork. Sprinkle a little salt on it & a few drops of oil.

    Set aside for about 15 minutes.

    Cook in a preheated Grill for 5-6 minutes turning halfway. *No need to turn if using an Indoor Grill. A Grill Pan or an Oven on Grill/Broil mode can be used.

    Dry roast the Sesame Seeds until golden & aromatic.

    Grind together with the ginger & garlic. Add the Oils, honey & the Apple Cider Vinegar. Whisk well.

    Cut the grilled Chicken Breast into thick & long strips.

    Combine the Cabbage, Carrots, Lettuce , Red Onion Slices, Chicken Strips, Slivered Almonds & Dried Cranberries.

    Drizzle some freshly made Asian Sesame Vinaigrette/Dressing.
