Ingredients

  • Potatoes-5


  • Refined flour(maida)-1cup


  • Oil -1 1/2 cup


  • Salt-1 tsp or as per taste


  • Chopped green chilly and ginger-1 tsp


  • Black pepper whole-6-8


  • Red chilly powder-1/2 tsp


  • Turmaric powder-1/2 tsp


  • Garam masala powder-1/2 tsp


  • Aamchur powder-1/2 tsp


  • Hing-1 pinch


  • Fuming seed-1/2 tsp


  • Chopped Corriender leaves-1 tsp

Directions

  • Boiled and peel the potatoes and mashed. Heat a pan and add 1 tap oil. Add hing and cumin seed. When it crackle add green chilly and ginger.
  • Now add Turmaric powder, Red chilly powder, garam masala powder, and Aamchur powder and mix. Add mashed potatoes and salt and cook till 2 minutes. Add Corriender leaves and switch off the flame and keep it in a plate.
  • Take maida in a bowl. Add 2 tsp oil and 1/2 tsp salt and mix. Add sufficient water and make a soft dough. Cover and keep it for 5 minutes.
  • Now make some medium sized ball and some small sized ball from the dough. Make round shape poori from both the size. Like this.
  • Take medium sized poori and fill with potato mixture. And fold this like a guzia shape.
  • Fold again like this.
  • Fill the potatoe mixture in also small sized poori. And shape this like modak
  • Attached 2 whole black pepper in some distance in small dumping. This will be duck eyes.
  • Take 1 tsp maida in a bowl. Add 2 tsp water and make a smooth batter.
  • Take 1 Tooth pick and cut it in 1 inch piece.dip tooth pick in flour batter and put it in the end of duck eyes and the second portion put in the duck stomach. Like this.
  • Make all ducks like this.
  • Heat oil in a kadhai and fry all ducks on medium flame.
  • Fry all duck shape samosa till light brown. Serve hot with tomato ketchup or green chutney.
