Wash the potatoes and put it in a pressure cooker with water added to it to soak the potatoes with salt. Allow 3-4 whistles to blow to boil potatoes.
Take out this boiled potatoes. Peel them and mash them.
Add finally chopped onions, cumin seeds and schezwan sauce to it and mix well.
Add all dry spices and mix well . Add coriander leaves and mix well in batter for filling in dough.
All the ingredients to be mixed well and kept aside.
Take a dough. Make a chapatti. Apply some ghee and in centre add potatoes batter and seal it from all sides properly.
Now again till it and flatten it in the form of a parantha with the help of rolling pin and board.
Apply ghee on tawa. Place this stuffed aloo parantha on tawa and flip on both sides till parantha is completely cooked and crispy.
