Ingredients

Serves : 12
  • ingredients For Dough (12 Kulcha) 4 cups All Purpose flour


  • 2 tablespoon oil


  • Curd 1 cup


  • Salt 1/2 teaspoon


  • Water according to need


  • For Stuffing (will make 12 balls) 1 kg - Boiled Potatoes


  • 3 tbsp Chopped coriander


  • Salt and chilly according to taste


  • 1 tablespoon chat masala


  • 1 teaspoon garam masala


  • Butter for greasing


  • Other ingredients :


  • Chopped cilantro


  • Kalonji 1 /2 tablespoon

Directions

  • First mix oil, flour, curd and salt with hands. knead a soft dough. Knead the dough for 5 to 7 minutes.
  • Grease a bowl and place the dough. Apply some oil. Cover it with plastic wrap and let it ferment for an hour.
  • For Stuffing Take all the ingredients in a bowl. Mix them well and divide into 12 equal size balls. Keep it aside.
  • Dust the working surface with a bit of all purpose flour. Take out the dough onto the working surface Knead the dough once with help of little bit flour. Divide them into 12 equal size balls.
  • Take a ball and gently press it and keep prepared stuffing ball in the middle and seal it into a ball. Do the same process with the rest of the balls.
  • Take one ball and spread the dough using your fingers into a thick paratha. sprinkle some cilantro and kalonji on the top.
  • Place the rolled kulcha on a regular tawa, apply some butter both the sides and later on cook them from both the sides over direct flame on medium to high heat.
  • Amritsari Kulcha is ready. Apply butter liberally on it . Serve them hot with Chole, onion chutney and lassi .
  • Yummy amritsari kulcha is ready to serve.
